Three Tips for the Perfect Steak

- About half an hour before grilling take the steak out of the fridge to bring to room temperature, sprinkle generously with kosher salt.
- Sear the steak over high heat on each side, then slide the steak away from the direct heat.
- Never walk away from the steak – always better to remove early than to overdo. You can always put the steak back on to cook further but you can’t undo an overdone steak!
