Three Tips for the Perfect Steak

    1. About half an hour before grilling take the steak out of the fridge to bring to room temperature, sprinkle generously with kosher salt.
    2. Sear the steak over high heat on each side, then slide the steak away from the direct heat.
    3. Never walk away from the steak – always better to remove early than to overdo. You can always put the steak back on to cook further but you can’t undo an overdone steak!
